Kaandha Poha (Maharashtrian Potato-Onion Beaten Rice) - by Anu

SERVES 1 (change servings and units)

Ingredients

2 cup beaten rice (poha)
Vegetable oil
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1/4 teaspoon chilli powder
1 green chili pepper, slit lengthwise
1 medium onion, thinly sliced
2 small potatoes, peeled,diced
carrots & green peas/cabbage
salt
sugar
2 tablespoons water
1 tblsp lemon, juice of
1 teaspoon chopped coriander leaves

Directions

  1. Soak poha in enough water to cover (NOT the 2 tablespoons of water) for 5 minutes.
  2. Drain and squeeze out excess water, working in batches of handfuls.
  3. Heat oil in a skillet and add the mustard seeds.
  4. When the mustard seeds start to sputter, add the onion and and saute for 5 mins. Then add the potato and green chillies and saute for some more time . Add the mixed vegetables.
  5. Add salt, turmeric, chilli powder and 2 tablespoons of water, and cover.
  6. After 5 minutes, uncover, add the poha and saute for another 5 minutes.
  7. Add the lime juice and sugar and garnish with chopped coriander.
  8. Serve hot.
